Buckle up, folks, because today we have an extremely exciting recipe. I love all of my recipes, but, not gonna lie, there are some that get me a little more hyped than the others. This recipe includes so many of my favorite flavors, foods, and ingredients all in one. We had my Ultimate Crab Cake Recipe, and now we have my ultimate ice cream sandwich recipe. Without further ado, I present: Blueberry & Honey Cornbread Cookie Ice Cream Sandwiches. Yes. You heard me. Blueberries, honey, cornbread, cookies, and ice cream sandwiches all in one.

Let’s Dig In

I know that was probably a lot to take in and you might be a little confused as to how this all works. Let me break it down for you. These Blueberry & Honey Cornbread Cookie Ice Cream Sandwiches start with a cornmeal cookie. The cornmeal cookie recipe is adapted from the Sweetest Menu’s “Perfect Cornmeal Cookie” recipe. Think of a chewy sugar cookie that tastes like cornbread. I decided take it up a notch and replaced the sugar with honey and added in blueberries. And that is how the blueberry and honey cornbread cookie was born.

Honestly, you could stop at this point with this lovely batch of cookies, BUT you’ve made it this far so you might as well plop on a scoop of vanilla ice cream! So we have a blueberry and honey cornbread cookie that we’re now going to top with a (generous) scoop of vanilla ice cream. Then we’re going to finish it by smushing another cookie on top. Now, we have our completed Blueberry & Honey Cornbread Cookie Ice Cream Sandwiches!

End the Summer with a Bang!

These ice cream sandwiches are on a whole other level. You would think that cookies, cornbread, ice cream, and ice cream sandwiches couldn’t get any more delicious but they sure can! This dessert is literally everything I love in one bite!

If you haven’t had an ice cream sandwich at all this summer, then you must make these. I’m pretty sure it’s illegal to not have eaten an ice cream sandwich during the summer. So end the summer with a complete banger of an ice cream sandwich! How can you deny vanilla ice cream sandwiched between two extraordinary cookies that freaking taste like cornbread?! Blueberry & Honey Cornbread Cookie Ice Cream Sandwiches

Vanilla ice cream sandwiched between two soft and chewy cornbread cookies mixed with blueberries and honey!

Ingredients

  • 1 1/3 cup All Purpose Flour
  • 3/4 cup Cornmeal
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Room Temperature Unsalted Butter (1 stick)
  • 1/2 cup Honey
  • 1/4 cup Brown Sugar
  • 1 tsp Vanilla
  • 1 Large Egg
  • 1 1/4 cups Fresh or Frozen Blueberries
  • As Needed Vanilla Ice Cream

Instructions

  • In a medium sized bowl, combine the flour, cornmeal, baking soda, and salt. Whisk the ingredients together until they are evenly distributed. Set it aside for later.

  • Add the butter, honey, and brown sugar to a large bowl. Cream the ingredients together with an electric mixer until they become light and fluffy. Add in the vanilla extract and egg. Mix until the ingredients are fully incorporated.

  • Add the dry ingredients into the bowl and mix on low speed. When the ingredients are fully combined, add in the blueberries. Use a rubber spatula to gently fold them into the dough until they are evenly distributed throughout.

  • Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.

  • Preheat the oven to 350˚F. Line a few sheet trays with parchment paper.

  • Remove the dough from the fridge. Scoop the dough into 2 tbsp sized balls and place them onto the sheet tray, spacing them about 2 inches apart. Bake them in the oven for about 15 minutes. The center should be slightly soft and the edges should have set and turned golden brown.

  • Remove the cookies from the oven and allow them to cool on the sheet tray for a few minutes before transferring them to a wire rack to cool completely. Once the cookies have scoop a ball of vanilla ice cream and sandwich it with 2 cookies. Repeat this process with the remaining cookies. Enjoy!
