Pivovar is a family-friendly brewery located in downtown Waco, TX. They have a brewery, restaurant, beer garden, and Czech bakery on the main level. They also have a hotel with a beer spa on the upper level with 28 room and copper tubs full of beer.

First time visit, was everything a friend said it would be and then some.Jordan was friendly and knowledgeable. She herself is five stars!The schnitzel was perfect and the grain salad with all its fresh vegetables was incredible. We enjoyed the beer tasting, and the history of how it is made in house. We visited the bakery with its trays of savory breads and rolls, along with sweet pastries. Waco has a new Gem, both the menu and the atmosphere will surely have us coming back.

Great food at a reasonable price. Managed to book a table effortlessly but ended up enjoying our meal at the bar. Food was outstanding (especially the goulash) and their own new beers were exceptional. co*cktails need a bit of industry standard oomph though. Impeccably clean throughout and friendly staff made for a very pleasant evening.

We did not stay at the hotel but we ate at the restaurant, and everything was excellent. I visited the Czech Republic a few years ago, and I really enjoyed my experience, and the food here reminded me of being there. All of the beers are great, and the Goulash was superb. My wife had the Schnitzel and really enjoyed it as well. Definitely worth checking out if you're in Waco!

Ate at the restaurant on a Friday night. We were promptly greeted and shown to a table. We did have a reservation. Started with a Vienna Lager which was delicious, a great brew! Ordered fried cheese which was awesome. For dinner I had the Goulash and my wife had Czexan Schnitzel. The Goulash was very good but not as good as I've had in the Czech Republic. I actually preferred the Schnitzel over the Goulash. For desert I had Cheesecake and I absolutely loved it! We were well taken care of throughout the evening by our server. We had a nice time while visiting with friends. I can recommend this restaurant.

We visited the restaurant/pub to catch up with friends and were compelled to give it a two-star rating due to several factors. Initially, we found the prices exorbitantly high, well above the current average. Additionally, the serving sizes were disappointingly small. The service quality was another major issue. A case in point: our burgers were overcooked to the point of dryness, and despite us barely eating them, the server failed to inquire about our dissatisfaction or the reason behind our minimal consumption. In fairness, the manager did approach us to inquire about our experience, but she merely nodded and smiled as we expressed our concerns, showing no real interest or effort to address the issues or offer any form of compensation.

Great food, great service and very nice atmosphere. The Rueben I ordered had very lean and lots of meat and the bread was not greasy wet at all and my fries came out perfect the way I wanted! My husband ordered the 3 sausage plate and it was yummy too.

The beer was excellent. Ordered the Texas schnitzel. Extremely overcooked (dark brown) and shoe leather dry. Could barely cut it. It was a basically a rolled up schnitzel with a tiny dab of mashed potatoes. Miniscule amount of potatoes but they were very good. The mushroom sauce was also great. Please do better on the schnitzel.

I was very impressed with the service and the food. We here with our two daughters (2 and 1) and the staff was very accommodating. Food was amazing beer and drinks were great. Stopped out after dinner for a drink and dessert it was great. I think we met the owner who seemed like a great guy. I will be back and would recommend anyone to this place honestly one of the best dining experiences I've had.

Our party of four had a late lunch/early dinner here and a good time was had by all. The timing on a Sunday afternoon was great as the place was not at all crowded and service was very prompt. Our shared appetizers arrived first, an order of fried cheeses, and the roasted Brussel sprouts, and were not only delicious but also complimented each other very well. Our individual entrees included grilled salmon, pork schnitzel, Pivovar sausage, and a Reuben sandwich. All offerings were so yummy! We will definitely make a return visit soon.

Went for dinner and was very impressed with my meal. The ambience was amazing. Live band was playing. Very unique restaurant. Service was amazing and food came out very quickly. I got the schnitzel with was excellent. For an appetizer we had the Brussel sprouts which were great. We also got the Cobb salad and the salmon. We split sides of the sweet potato fries and the Mac and cheese. Will definitely be going back soon.

Just loved the place! From A to Z. From the professional and welcoming management run by Radim, to the decorative, retro, thematic furnishings and comfort of the bedrooms. Last but not least, the food and beer selection down at the restaurant/brewery was just as great. Highly recommend this place to anyone and everyone. Especially the central Europeans from the Czech Republic and Slovakia regions, as they'll definitely find their own here. 10/10.

We live locally so only had dinner and not a hotel stay. We visited on a week night and it wasn’t super busy. We received decent service. I had the salmon and it was very fresh and well prepared. The others in our party had the schnitzel and liked their entrees but didn’t love them. Beer was good and I’d like to try a flight next time to sample some of their others. Overall, while our experience wasn’t stellar, it was above average and we all agreed we’d enjoy coming back to try other dishes.

Best dining experience in Waco!!!Do NOT pay attention to the poor reviews because this place is phenomenal. They are still having a soft opening, and especially during the holidays they are short staffed, but that didn’t stop them from giving us a top notch experience! Everything is excellent: food, prices, service, etc. For appetizers, the stuffed peppers and fried cheese are insanely good. My party got the gnocchi, beet salad, mashed potatoes, and schnitzel. Everyone was beyond satisfied with their choices. The portions of everything were extremely good. Excellent prices too! The salads are huge and so fresh. My parents sampled the pilsners and they are truly authentic Czech/Eastern European style beers (they lived in Eastern Europe for 27 years so a big compliment!!) the only ones you can really find stateside! You might get to have a tour of the in-house brewery if you ask! :)So fun to have a taste of the homeland in Texas.Top notch 10/10! Thank you!

Everything I ate at Pivovar tonight was delicious. The roasted Brussels sprouts were perfectly carmelized, with a lightly sweet sauce that was perfect for dipping the olive bread slices. I highly recommend the seafood risotto, which a nicely balanced blend of flavors and perfect texture. And the chocolate mousse dessert was fluffy and rich. The service was excellent. I hope to go back again before too long.

We were unsure of eating Czech food. We walked in and the building was beautiful. The hostess was so full of information. She told us that all of the furnishings in the building were imported from the Czech Republic. They make their own beer there from ingredients from the Czech Republic. I don't eat gluten and the hostess was able to tell me about dishes that were gluten free. We were seated and even though it was right around noon it wasn't packed which made it nice as there were 5 of us trying to talk. One person ordered a beer and it was brought in a cold mug with a unique design they said it was the best beer they had had. Two different pairs ordered the Ruben and onion rings to share. It was more than enough food. Another person ordered a burger and said it was delicious.

I booked a stay for Saturday Aug, 19, 2023 to celebrate my husband's upcoming 50th birthday. If you're celebrating an important event or looking for a romantic getaway, the hotel is worth the splurge. Dubbed "A Czech Inspired Luxury Experience", our experience exceeded our expectations. This is a brewery, hotel and restaurant all in one. When we first arrived, we were not sure if we were supposed to park in the Premium Parking lot adjacent to the hotel. However, upon check-in, we were quickly assured that this parking is included in our stay and I was handed a hotel parking pass to place on the dash of my vehicle. Karen took the time to check us in and go over our welcome package. We had a beer spa appointment later in the day and she confirmed that she would come up to our room to escort us to the beer spa. We had some time before our appointment and we settled into our well appointed room. The room type that I booked ("The Weary Traveler - King") has a copper tub instead of a shower. The bathroom also features two copper sinks and a separate bidet. After passing the entryway, there is beautiful desk and plenty of seating. There is a luggage rack as well as an area at the foot of the bed to accommodate your luggage. By the TV area, there is a bottle of complimentary water and a Keurig machine. Underneath, there is a refrigerator containing items for purchase as well as creamer for your coffee (and you can certainly use the refrigerator to store your own beverages). The is an RO water cooler and ice machine by the elevator where you can refill your glass water bottle. After inspecting our room, we took a very short walk across the train tracks to The Silos. There is a train that runs through the area, but we did not hear any train go by in the evening. After that, we headed to our back to our room and Karen escorted us to our beer spa, which was a few doors down from our room on the same floor (very convenient!). It is a private room containing two copper tubs full of beer and beer soap (this experience costs $200 whether for a single person or a couple). We were given a little over an hour to soak and enjoyed a beer flight. It is recommended that you rinse in the shower after your soak. We ended the night cashing in our free beer coupons that we received in our welcome package. The beer comes in these very large (17 oz) glass steins. All of their beer is delicious; very light and easy to drink! For dinner, we had the Czexan Schnitzel (I don't think that the Pivovar Sauce went well with this dish) and the Pork Shank (I'm not that was worth the $30). The restaurant was relatively busy and there was live music. My husband went to bed, relaxed and elated to be sleeping on top of a brewery. It was truly a wonderful experience and stay.

This hotel is GORGEOUS. Both from photos and in person.When we arrived, I had informed the front desk employee we were celebrating a late birthday trip for my husband. He was not very friendly or overly engaging. (I had to wait to be checked in for a bit as he was busy on the phone). He showed me the welcome packet and features of the hotel/resturant but was not super welcoming like I'm reading from other reviews. I also saw multiple reviews of complimentary beer coupons as guests and I was so excited to try the Czech beer in house.We were not given anything or other recommendations for the area, etc.The room is lovely, the tub is great also! (Chipping in places, but very relaxing). Bed is a bit more firm than I would have preferred, but the room is tastefully decorated and quiet.It was disappointing that the service was sub-par. I did notice upon check out that they were cutting up coupons for free beers. Which we sadly NEVER received. Quite disappointing for such a gorgeous hotel and space to receive sub-par service.

I eat here for lunch and dinner frequently. It's a great spot with good food. The schnitzel is authentic, the pork knuckle fantastic and the deviled eggs were good. Try their beer or spirits and the changing co*cktail menu should also be observed. An overall great dining experience.

Had a great time at the hotel's restaurant on Saturday night. We tried both the beer and wine flights, both very good. Especially the beers, which instantly reminded me of the ones i had in Prague years ago. We ordered Schnitzel and Fish and Chips, both great. The Schnitzel looks and definitely tastes like the real deal. Best fish and chips I had in Texas so far. The place is beautiful and well located. Parking was easy. Service was really good. The young man who served us was extremely helpful and attentive (thanks Noah). It's kinda expensive, though. I'd like to try other dishes, as the Goulash. Will definitely be back when I can.

Stopped in for dinner on Sunday / Mother's Day. Great beers and food menu! We had a flight of their four beers, glass of wine. For dinner we both had the Texas Pocket Schnitzel which includes mashed potatoes and added the House Goulash Sauce and also the Cream Sauce with Mushrooms on side - Perfect, great flavor, excellent! And the service from our server, Colby, was excellent too!

We went to the bar and restaurant and had some very tasty beers and amazing food. The breading on the schnitzel was great and the Reuben came with a fantastic beer mustard. We got the Czech flights and were impressed by the flavors of all the beers, particularly the amber.

One word… Flavor.The textures, the flavors, everything was spot on here.We began our evening at the beautiful bar. The entire space is comfortable and authentic, but somehow modern. If you are a wine drinker don't even bother looking at the wine menu, just ask for the house red and you will get the best blend I’ve had in a while. It’s a Czeck wine which fits the theme. My husband enjoyed the beer sampler and he is a major German beer snob so I didn’t think he would like most of them. Both he and I were pleasantly surprised. All except the dark lager were exceptional, but he’s not a fan of dark beer anyway. I thought the dark lager was excellent ! We enjoyed the schnitzel, and the pork shank. Everything was cooked to perfection, super flavorful, and memorable. The service here is also wonderful. We were greeted by a friendly and accommodating lady, followed by excellent bar and table service. The staff is knowledgeable. If you’re wondering if it is too fancy for you, we saw families dressed more casually andOthers dressed very nice. So anything goes here! It’s a relaxed environment, a great place for a family to come and enjoy, but also a great place for a special date. If I had company coming to town, this would be exactly where I would bring them.

We did not stay just went to the restaurant over all experience was just ok. The interior was really nice I loved all the green. The restaurant was not packed at all. We got our food relatively quickly but for the price it was honestly pretty small portions, when compared to the kids dishes which are the same size of the full price dishes. Our server was really slow with things like waters and extra lemons and ketchup, they also charge you 2$ for a side of mayonnaise and it's not a lot of mayonnaise.

A combination Czech brewery/restaurant/hotel/beer spa, Pivovar offers a one-of-a-kind experience. We paid the restaurant side of the operation a dinner visit and had an all-around terrific meal.The ambiance here is attractive, blending wood and green leather with a view of the brewery. Our server for the evening (Ian?) was also tending bar, and he handled both roles capably without breaking a sweat. A manager later came around to check on us, which speaks to a dedication to customer satisfaction.Pivovar’s drinks menu features pilsners and lagers brewed in-house while the food offerings have a Germanic bent. You can still eat lighter here (salads and sandwiches), but anyone looking to indulge in sausage, schnitzel, or steak will be pleased with what’s available.My wife and I split a pretzel starter and then opted for the sausage platter and the classic pocket schnitzel, respectively. The pretzel was large, soft, and well-salted, and it came with a trio of dips. Of them, the beer mustard was commendably robust, but the honey mustard and beer cheese were more enjoyable. The sausage platter included what appeared to be a bratwurst and two other sausages alongside corn ribs and sauerkraut. All of the sausages were tasty and offered a firm bite while the corn tasted fresh from the grill. While the schnitzel would have benefitted from a vegetable pairing, everything on the plate was excellent, from the garlicky mashed potatoes to the schnitzel’s crisp batter, juicy pork, and cheesy filling. Dessert options included a crème brulee cheesecake that I couldn’t pass up, and I’m glad that I had enough room for it. The graham cracker crust had spice notes that reminded me of carrot cake, and the thin layer of sugar topping was very satisfying. My wife also spoke highly of the dark lager.Pivovar isn’t cheap, and some of the menu offerings seem like reaches (i.e. $18 for a meatless salad). However, our entrees ($21 and $19) were reasonable for the quality of the food.That Pivovar offers a kind of cuisine I don’t usually find made it attractive, but the combination of ambiance, service, and well-executed food made it memorable. Do yourself a favor and Czech it out.
